This seasonal sauce is centered around the Hatch Chile Season, an annual chile-head treasure hunt. Its small production and limited distribution make it a coveted favorite that sells out quickly (sometimes referred to as “The Pliny of Hot Sauces”). Hell, I don’t even know how Fuego Box talked Infinity into parting with most of their inventory (must have been the shared Hatch-Quatch Margaritas).

Baked potatoes, sour cream dip, green bean casserole, roasted brussels sprouts, tamale pie (Thanksgiving leftovers), and straight-up avocados.

Vinegar, Roasted Hatch Chiles, Water, Roasted Jalapeño, Roasted Garlic, Salt, Scorpion Pepper, and Cilantro.
